Inspired by the Bounty: Recipe for Massaged Kale Salad with Strawberries, Edible Flowers, and Toasted Pistachios
Jun 30, 2016This salad was inspired by a fruitful trip to the farmer's market. It's filled with lots of nutrient-dense ingredients that will support your health and immune system, and is so easy to make!
The best part? It's absolutely delicious.
Massaged Kale Salad with Strawberries, Edible Flowers, and Toasted Pistachios
Ingredients:
- 2 heads kale of choice
- 1 quart strawberries
- handful of pistachios
- ¾ cup oil
- ¼ cup vinegar
- 1 TB maple or honey
- handful of edible flowers
- salt, pepper
Directions:
- Wash & de-stem kale
- Create your dressing: 3 parts healthy oil of your choice (Olive, Avocado, Flax) to 1 part vinegar of your choice (Balsamic or Ume work great here). *Add in any or all of the following until vinaigrette tastes good to you: a dash of maple/honey, a pinch of red pepper flakes, a twist of lemon, a bit of Bragg’s liquid Aminos or tamari, a small scoop of dijon are some options. If something’s off, it either needs more sweet, salty, or sour…
- Sprinkle a 3-finger pinch of sea salt & pepper over kale
- Wash hands, break up/squeeze/massage salted kale with your hands for about a minute
- Pour vinaigrette mixture over massaged kale & let sit
- Wash, de-stem, & halve strawberries
- Toast pistachios
- After salted, massaged kale has sat in vinaigrette for at least 15 minutes, add strawberries, edible flowers, and toasted pistachios atop, and call it a day!
